THE COMPANY
Starting in 1978 from the Trapani countryside, Firriato expanded in search of those viticultural contexts – very characteristic – where he could express precision viticulture, dedicated to enhancing the traditional Sicilian vines.
The company has undertaken a major project to safeguard and recover the varied territory of the island, even embracing the specificities of the territory of the most active volcano in Europe: Etna

The winemaking history of the Etna Volcano is lost in the mists of time. The discovery of wild vines (ampelidae) testifies to the millenary presence of the species on Etna already in the tertiary era and the poet Theocritus, in the 3rd century BC, speaks of a great diffusion of the vine starting from the 8th century BC.
In the 19th century, the vineyard area on Etna reached 8,000 hectares and, in the mid-1800s, Baron Spitaleri created the first sparkling wines with refermentation in the bottle.

In the vineyards of the Cavanera Etnea estate there is a rare and precious treasure: a pre-phylloxera vineyard. Long-lived, centenary plants, which are distinguished by the formation of the trunk, often evolved into concentric circles, spirals and twisted arms. Creatures that time has forged, bringing them to us, full of history. From these centuries-old plants comes Etna Riserva Signum Aetnae, the flagship of Firriato’s Etna production, which vinifies Nerello Mascalese grapes and other relic varieties in its ungrafted vineyard.
