A district “known” in history for the quality of its red wines, the Verzella area presents different soil and climatic conditions of the vineyards; in fact, the different parcels guarantee wines of high freshness (acid profiles) and aromatic complexity, thanks to this multifaceted microclimatic framework. Shallow, very sandy and fertile soils of volcanic matrix, with high draining capacity, are characterized by the high concentration of nutritional elements such as phosphorus, which determines the concentration of sugars in the must, manganese which increases the defense capacity of the wine from the cold plant. The microclimate of the vineyards is subjected to enormous day/night temperature variations.

The 2019 vintage is generally affected by the colder and rainier climate trend compared to the averages of recent years. Temperatures were below the seasonal average during the flowering period and favorable climatic conditions were also recorded during ripening. The vegetative development of the plants was optimal, with perfectly functioning foliage, and a reduction in the average weight of the bunch which favored an increase in the average quality. During the ripening process, an increase in the level of sugars and the component of aroma precursors in the grapes was recorded thanks to the strong temperature variations between day and night. This evidence attributes to the vintage characteristics of excellent balance between the olfactory (aromas) and gustatory components (alcohol/freshness ratio). Harvesting operations began with an average delay of 8-10 days compared to the previous year.
The Etna terroir with its mesoclimate and its sandy soils of volcanic origin offers ideal conditions for the breeding of Nerello Mascalese. This vine, endemic to the volcano, naturally allows itself to be made into sparkling wine and the classic Firriato method thanks to the high levels of malic acidity. Thanks also to a low level of anthocyanins, from which the pale red color of the wine derives, it is possible to proceed with a sparkling rosé process with notable results. After the manual harvest, we proceed with a skin maceration in the press for a short time, from one to two hours. The combination of the pedoclimatic characteristics of Etna, characterized by high temperature variations between day and night, the exposure to sunlight typical of the Mediterranean area and the richness of the soil, contribute to the development of grapes that are characterized by the intensity of the aromas and aromatic finesse that are enhanced with sparkling wine. Highly intense fruity scents of strawberry and berries, light floral notes, in particular violet.
